Domaine Berthet-Bondet
Domaine Berthet-Bondet is one of Jura's benchmark estates for Vin Jaune, the extraordinary oxidative white wine made from Savagnin grape aged under flor yeast in old oak barrels for a minimum of six years and three months. Founded by Jean Berthet-Bondet and Chantal Bondet in 1985 in Château-Chalon, the domaine farms parcels in the appellation widely considered the finest source of Vin Jaune. Château-Chalon is the most prestigious Jura appellation with strict quality standards including a declassification clause in poor vintages (as in 1984, 2001, and 2012). The estate also produces Côtes du Jura whites and reds, but the Château-Chalon Vin Jaune is the primary driver of auction interest and price. At auction, Berthet-Bondet averages $440 per bottle across 129 lots, with prices ranging from $279 to $2,306 — the latter for older vintages and the distinctive 62cl clavelin format. Vin Jaune's extraordinary longevity (50+ years), unique flavor profile, and declining production in top appellations make it increasingly sought after at auction globally.

In the Glass
Berthet-Bondet Vin Jaune is one of wine's most singular taste experiences: curry, walnut, dried apricot, beeswax, and toasted hazelnuts with a profound, almost savory umami quality from the flor yeast oxidation. The palate is rich yet lean, with a bone-dry finish and extraordinary length. Young examples show more fruit; older vintages approach pure nuttiness and mineral intensity.
