The Adelaide Hills, rising to 700 metres above sea level just east of Adelaide, represents South Australia's coolest and most altitude-influenced growing region. The temperature differential from the Barossa Valley is dramatic: while the valley floor bakes at 35°C+ in summer, the Hills rarely exceed 28°C, producing Chardonnay, Pinot Noir, and Sauvignon Blanc with Burgundy-like restraint. Ashton Hills, founded by Stephen George in 1982 on pure Piccadilly Valley silica-sand soils at 550m, produces the region's most auction-collected wine: the Obliqua Reserve Pinot Noir, with old-vine Pinot Noir from the Piccadilly Valley block. Shaw + Smith, Petaluma, and Grosset (actually Clare Valley-based but with Adelaide Hills fruit) define the premium white tier. The Lenswood sub-zone, at the Hills' highest elevations, is particularly suited to Chardonnay and Pinot Noir; Henschke's Croft Chardonnay from Lenswood is a benchmark expression of cool-climate South Australian white winemaking.

Ashton Hills' Obliqua Reserve Pinot Noir from pure silica-sand soils at 550m elevation in the Piccadilly Valley is the Adelaide Hills' most auction-collected wine — produced in tiny quantities from extremely old-vine material with Burgundian-inspired minimal intervention.

The Adelaide Hills' elevation (400–700m) produces South Australia's coolest growing conditions outside Coonawarra; at 700m, daytime summer temperatures rarely exceed 26°C, creating natural conditions for Chardonnay and Pinot Noir comparable to the Côte d'Or.

Shaw + Smith's M3 Chardonnay, sourced from three specific Adelaide Hills blocks (hence M3), is the region's benchmark commercial Chardonnay: Burgundian in style with restrained new oak, leesy texture, and mineral precision that rewards 5–8 years of cellaring.

Petaluma, founded by Brian Croser in 1976, was one of the first producers to identify Adelaide Hills' potential for cool-climate varieties; Croser's method traditional sparkling wine established the Hills' credentials for quality wine beyond the warm-country Shiraz narrative.

Adelaide Hills' coolness (elevation 400–700m) produces wines of Burgundian finesse rather than Australian generosity. Chardonnay is restrained and mineral: white peach, nectarine, lemon curd, and a chalky texture from the silica-sand soils. Pinot Noir shows delicate red berry fruit, forest floor, and fine tannin — closer to Côte de Beaune than to warm-climate Pinot expressions. Sauvignon Blanc is crisp and aromatic with passionfruit, lime, and cut grass. All whites retain the natural acidity essential for bottle development.
