Azienda Agricola Salvioni La Cerbaiola

Salvioni La Cerbaiola is one of Brunello di Montalcino's most revered small estates, operated by the Salvioni family from their property in the northern quadrant of the appellation near Montalcino town. The estate produces a single wine — Brunello di Montalcino — from approximately 4 hectares of Sangiovese Grosso, with a Riserva made in exceptional years. Production is tiny: typically 1,200–1,500 cases of Brunello and 200–400 cases of Riserva. The Salvioni family farms traditionally, using only large Slavonian oak botti for ageing and practising meticulous selection in the vineyard. The northern position and elevation of the La Cerbaiola vineyard produces wines of exceptional finesse and ageing potential, with more defined structure and aromatic complexity than warmer southern Montalcino estates. Across 402 auction lots, the estate averages $202 per bottle with prices reaching $1,169. Wine Advocate has awarded Salvioni Brunello scores of 95–99 across multiple vintages, with the 2010, 2012, and 2016 editions particularly celebrated.

Salvioni La Cerbaiola produces only one wine commercially — Brunello di Montalcino — from 4 hectares of estate Sangiovese Grosso, with annual production of just 1,200–1,500 cases.
Wine Advocate awarded the 2010 Salvioni Brunello 98 points and the 2012 edition 97 points; multiple vintages have exceeded 95 points, establishing it as one of the appellation's most consistently outstanding estates.
The Riserva is produced only in exceptional years in quantities of 200–400 cases; it commands significant auction premiums and rarely appears on the secondary market due to collector hoarding.
402 auction lots average $202 per bottle with a ceiling of $1,169 — excellent value relative to comparable Brunello producers of equivalent critical acclaim and production scale.

In the Glass

Salvioni Brunello is northern Montalcino of the highest order: pure, transparent Sangiovese Grosso character — dried red cherry, rose hip, iron, mineral earth, and tobacco — with firm, linear tannins and soaring acidity that demands patience. No new oak influence; just large Slavonian botti that allow the terroir and variety to speak without distraction. The wines need 12–15 years minimum and evolve magnificently over 30–40 years. At their peak they are among Italy's most complete expressions of Sangiovese.
