Domaine Dauvissat

Domaine Dauvissat — formally René & Vincent Dauvissat — is the co-equal partner to Raveneau in defining world-class Chablis, with a history that traces the very birth of estate bottling in the appellation. Robert Dauvissat began selling wine under the family name from 1931; his son René elevated the reputation through the mid-20th century; and Vincent Dauvissat, who began working alongside his father in 1976, is now considered among the five best white winemakers on earth. The estate covers 11 hectares, with Grand Cru parcels in Les Clos and Les Preuses, and Premier Cru holdings in La Forest, Vaillons, Séchet, and Montmains. Unusually for Chablis, Vincent ages his wines in old Burgundy pièces (228-litre barrels) for a minimum of one year, using only indigenous yeasts and allowing spontaneous malolactic fermentation. The result is Chablis of remarkable depth and longevity, combining the appellation's signature flinty minerality with a textural complexity that rewards 10–15 years of cellaring. At auction, Dauvissat Les Clos commands $500–$900 per bottle.

Vincent Dauvissat ages all wines in old 228-litre Burgundy barrels (6–8 years old) for a minimum of one year — a technique almost unique in Chablis that adds textural depth without imparting oaky flavour.
The estate has 11 hectares including parcels in two Grand Crus (Les Clos and Les Preuses) and four Premier Crus; Dauvissat's allocation is so tight that most importers receive only a few cases per vintage.
Robert Dauvissat was among the first Chablis producers to bottle under his own label from 1931; the estate's 95-year uninterrupted tradition of estate bottling predates most of Burgundy's famous domaines.
Dauvissat's La Forest Premier Cru, from old vines on the east bank of the Serein river, consistently scores 93–96 points and auctions for $250–$420 per bottle — pricing that challenges many Côte de Beaune Premiers Crus.

In the Glass

Dauvissat wines share a distinctive texture — broader and richer than Raveneau, with a honeyed weight that softens the appellation's characteristic austerity. Les Clos Grand Cru shows layers of crushed flint, oyster shell, and Granny Smith apple, gaining extraordinary complexity over 10–20 years. La Forest is more saline and focused; Vaillons offers generous fruit with mineral length.
