Burgundy's soils tell a 200-million-year story: a shallow tropical sea deposited the Jurassic limestone and clay that now underlies the Côte d'Or, creating the mineral-rich terroir that makes individual plots taste fundamentally different from their neighbours. Cistercian monks at Cîteaux began tasting and mapping those plots as early as 1098, and by the 13th century had established the principle that place — not just grape — determines wine quality. French inheritance laws since the Revolution have splintered ownership further: Clos de Vougeot's 50 hectares are divided among more than 80 producers, meaning the same Grand Cru appellation can range from extraordinary to ordinary depending on whose label is on the bottle. Grand Cru vineyards cover just 1.5% of Burgundy's total output. Domaine de la Romanée-Conti farms Romanée-Conti itself — a 1.8-hectare monopole — producing roughly 6,000 bottles per year, making it among the most contested lots at any auction house. At auction, the 2015 and 2019 vintages command the highest premiums, combining ripe concentration with Burgundy's defining tension. The Côte de Nuits dominates the top of the price ladder; the Côte de Beaune offers some of the finest whites anywhere in the world.

Red Burgundy is silk-textured Pinot Noir with red cherry, dried rose, and forest floor that deepens toward iron and game with age; the Côte de Nuits tends toward structure and power, the Côte de Beaune toward elegance and finesse. White Burgundy is mineral-driven Chardonnay — Côte de Beaune delivers hazelnut and cream alongside citrus, while Chablis strips it back to oyster-shell flint and razor acidity.
