Chablis sits in the Yonne department of northern Burgundy, 100 kilometres northwest of the Côte d'Or and closer in latitude to Champagne than to Beaune. Its defining geological feature is Kimmeridgian limestone — a specific formation from the late Jurassic period named after the English village of Kimmeridge, embedded with the fossilised shells of Exogyra virgula oysters. This chalk-and-fossil subsoil, combined with a cool continental climate that pushes Chardonnay to its northern limit, produces wines of exceptional tension: high acidity, restrained fruit, and a mineral salinity that is impossible to replicate elsewhere. Chablis operates on a strict four-tier hierarchy — Petit Chablis, Chablis Village, Premier Cru (40 officially recognised lieux-dits), and seven Grand Cru lieux-dits on a single south-facing hillside above the town. Producers Raveneau and Dauvissat define the top tier; their Grand Cru and Premier Cru bottlings are among the most sought-after white Burgundies on the secondary market. The tradition of ageing in stainless steel or neutral oak preserves the pure mineral character; the occasional use of barrique by ambitious producers sparks perennial debate among collectors.

Chablis' Kimmeridgian limestone contains fossilised Exogyra virgula oysters — the same oyster beds from 150 million years ago that many tasters claim gives the wine its characteristic saline, oyster-shell minerality.

All seven Chablis Grand Cru lieux-dits (Blanchot, Bougros, Les Clos, Grenouilles, Preuses, Valmur, Vaudésir) lie on a single south-southwest facing hillside of less than 100 hectares above the town of Chablis.

Raveneau and Dauvissat together farm fewer than 20 hectares of Premier and Grand Cru Chablis; their allocations sell out instantly and fetch 300–500% premiums over listed price on the secondary market.

Spring frost is Chablis' most persistent threat — the region lies on the northern edge of viable Chardonnay cultivation, and a single frost event in April can wipe out 80% of a vintage before it begins.

Chablis is Chardonnay stripped to its mineral essence — green apple, lemon zest, and white flowers on a knife-edge of acidity, with an unmistakable flint and oyster-shell salinity on the finish. Grand Cru Chablis adds weight and complexity with age: beeswax, chalk dust, and a tension that can sustain 15–20 years in the cellar.
