Domaine William Fèvre

Domaine William Fèvre is the largest and most influential estate in Chablis, farming over 76 hectares including 15.2 hectares of Grand Cru vineyards — the most extensive Grand Cru holding of any single proprietor in the appellation. William Fèvre built the estate over decades, becoming a pioneering advocate for Chablis's expansion and recognition. In 1998, William sold the domaine to Bouchard Père & Fils (part of Joseph Henriot's Maisons & Domaines Henriot group) for a reported $8 million, as his daughters were not interested in continuing the business. The acquisition brought investment and new winemaking direction under Didier Séguier, shifting from full barrel fermentation to a style that better expresses each cru's distinct character. Today the domaine produces Grand Crus from Bougros, Les Clos, Vaudésir, and Les Preuses, along with Premier Cru Montée de Tonnerre and Montmains, and represents the most consistent large-scale producer in the appellation. At auction, Fèvre's Grand Crus offer approachable entry points to serious Chablis, trading at $80–$220 per bottle.

William Fèvre sold the estate in 1998 to Bouchard Père & Fils for approximately $8 million, one of the highest valuations for a Chablis estate at the time; the Henriot group investment has since funded major improvements to the winery.
The estate produces Grand Cru Chablis from four of the seven Grand Cru lieux-dits: Bougros, Les Clos, Vaudésir, and Les Preuses — enabling side-by-side comparisons of Chablis's most prestigious terroirs from a single producer.
Under current winemaking direction, fermentation is split between stainless steel and a small proportion of old oak barrels, preserving Chablis's characteristic flinty mineral intensity while adding complexity on the mid-palate.
