Domaine de Montille

Domaine de Montille is one of Burgundy's great biographies in wine, built from just 2.5 hectares when Hubert de Montille took over in 1947 and patiently expanded while simultaneously practicing law in Dijon for nearly five decades. Hubert — the inspiring subject of the documentary film 'Mondovino' — was famed for wines of austerity and extreme longevity, using minimal new oak and late harvesting to produce structured Pommard and Volnay Premier Crus that often needed 15–20 years to reveal their full character. His son Étienne joined in 1983 and took over winemaking fully in 1995, converting to organic farming and beginning biodynamic techniques in 2005. Today the estate covers around 15 hectares across Volnay (Les Taillepieds, Les Mitans, Les Champans), Pommard (Les Rugiens, Les Pézerolles), and Puligny-Montrachet. Étienne also established a négociant arm, Deux Montille, with his sister Alix, enabling broader appellations. At auction, de Montille Pommard Rugiens and Volnay Taillepieds are consistently sought-after, offering Côte de Nuits-level complexity at more accessible prices.

Hubert de Montille practiced law in Dijon for nearly 50 years while simultaneously farming his vineyards — a feat of dedication that inspired a generation of part-time vignerons and was immortalised in Jonathan Nossiter's 2004 documentary 'Mondovino'.
The domaine began with just 2.5 hectares in 1947; today it spans 15 hectares across Volnay, Pommard, and Puligny-Montrachet, with all three Volnay Premier Crus (Taillepieds, Mitans, Champans) plus Les Rugiens in Pommard.
Étienne de Montille began biodynamic practices in 2005 and obtained organic certification in 2012; since taking over from Hubert in 1995, he has maintained the estate's house style of age-worthy, terroir-transparent Pinot Noir.
Hubert de Montille was famous for using zero to minimal new oak (typically 5–10%) — a philosophy ahead of its time in the 1970s and 1980s, when new oak was fashionable in Burgundy; the resulting wines remain exceptional 40+ years later.

In the Glass

De Montille wines are among the most restrained and intellectual in the Côte de Beaune — tightly wound in youth with firm tannins, bright acidity, and muted fruit that gradually gives way to extraordinary complexity. Pommard Rugiens is the most powerful and iron-laden; Volnay Taillepieds the most refined and perfumed; Mitans the most approachable with silky Chambolle-like texture.
