Paolo Scavino, based in Castiglione Falletto, is one of the most respected Barolo producers of the modern era—the estate that effectively bridged traditional Nebbiolo winemaking and the modernist revolution of the 1980s and 1990s under Enrico Scavino. His shift to shorter macerations and smaller French oak casks produced wines with more immediately approachable tannins without sacrificing longevity. The flagship Bric Fiasc from a single 3-hectare vineyard in Castiglione Falletto remains the estate's most coveted wine. Enrico Scavino pioneered the use of roto-fermenters in Barolo in the 1980s, reducing maceration times from 30–60 days to 7–14 days—a modernist technique he later moved away from as consumer preferences shifted back toward traditional structure.
