Canon-Fronsac is the prestige sub-appellation of Fronsac, covering the most prized hilltop parcels of the appellation — specifically the slopes around the village of Saint-Michel-de-Fronsac and the Canon plateau overlooking the Dordogne and Isle rivers. Historically Canon-Fronsac was considered the superior designation and simple 'Fronsac' the secondary appellation, though this distinction has become less commercially relevant as both appellations have raised quality together. The wines are produced exclusively from Merlot and Cabernet Franc grown on pure limestone and clay-limestone soils, which differ meaningfully from the sandier, mixed terrains of lower Fronsac. Château Canon de Brem, one of the historic flagships, was acquired by Jean-Pierre Moueix (of Pétrus fame) in 1971 and for decades served as the reference point for the appellation's potential. Canon-Moueix, Château Moulin Pey-Labrie, Château Cassagne Haut-Canon, La Fleur Cailleau, and Grand Renouil are among the leading producers. The appellation has benefited from the broader right bank boom since the 1990s but remains substantially undervalued at auction compared to its quality — bottles from the finest vintages can be had for $25–80, representing exceptional value for structured, mineral, age-worthy Bordeaux.

Canon-Fronsac sits on a plateau of pure Astérie limestone — the same geological formation found in Saint-Emilion's most prized Côtes parcels — that gives these wines a mineral tension and structural precision rarely found elsewhere on the right bank outside of the Saint-Emilion Grand Cru Classé tier.

Jean-Pierre Moueix, the négociant who managed Pétrus for decades and defined the modern Pomerol style, recognised Canon-Fronsac's potential early: his 1971 acquisition of Château Canon de Brem (now Canon-Moueix) brought the same attention to viticulture and winemaking that transformed Pétrus into a cult wine.

The Canon plateau commands panoramic views over the confluence of the Isle and Dordogne rivers — an aspect that maximises sun exposure and facilitates natural drainage, contributing to the concentration and freshness that characterises the finest Canon-Fronsac vintages.

Despite consistent critical recognition — many Canon-Fronsac wines score 90+ in professional tastings — auction prices have not followed, making this one of the most demonstrably undervalued AOCs in Bordeaux; a 2015 or 2016 Canon-Fronsac from a top producer can be purchased for the price of a modest Saint-Emilion Satellite wine.

Canon-Fronsac combines the Merlot plushness of the right bank with an unusually firm limestone-driven mineral backbone. The wines show dark cherry, blackberry, and iron ore on the palate, with a grippy, chalky tannic structure that is firmer than Pomerol in youth but resolves into an elegant, truffle-scented complexity with age. Medium-bodied, precise, and distinctly terroir-driven — closer in spirit to Saint-Emilion's limestone Côtes than to the clay-dominated plateau style.
