Hermitage is France's most revered Syrah appellation and one of the rarest — just 136 hectares on a single granite hill above Tain-l'Hermitage in the northern Rhône. With 2,600+ lots at auction averaging $342 per bottle, Hermitage punches far above its size. Jaboulet's La Chapelle (now Faurie de Beaucastel), produced from the famous chapel vineyard since 1961, was historically the auction benchmark; the 1961 was the first French wine to score 100 points in Robert Parker's Wine Advocate (1989). Chave's single-plot selections from Bessards, Méal, and Rocoules now represent the reference cuvées — his single-vineyard L'Ermite trades above $1,500. The granite soils of Bessards produce the most structured, long-lived wine; the sandy-clay Méal adds aromatics and mid-palate richness. White Hermitage from Chave and Chapoutier (Chante-Alouette, De l'Orée) is arguably France's greatest white wine value at auction, trading at $200–800 per bottle.

Jaboulet's La Chapelle 1961 was the first French wine to receive 100 points from Robert Parker, scored in 1989 after nearly three decades of aging; the wine now trades at $1,000–2,500 per bottle and remains a benchmark for Syrah worldwide.

Hermitage's 136 hectares produce just 350,000 bottles annually — less than many single Bordeaux châteaux — making it one of the world's genuinely scarce appellations despite producing both red and white wines.

The Bessards lieu-dit, on pure decomposed granite at the summit of the hill, produces Hermitage's most austere, tannic, and long-lived wines; Jean-Louis Chave's Bessards (declassified in lesser vintages) requires 20+ years before approaching maturity.

White Hermitage, made from Marsanne and Roussanne, is unique for its paradoxical ageability: extremely awkward in youth (5–15 years), it becomes extraordinarily complex — beeswax, lanolin, acacia honey, and roasted nuts — with 20–40 years of age.

Hermitage rouge is the archetype of northern Rhône Syrah: black olive, smoked meat, bacon, blackberry, and violets, with an iron and graphite minerality from the granite soils. The tannins are dense and dry in youth, requiring a decade minimum before softening into leather, game, and dark chocolate. Hermitage blanc (Marsanne/Roussanne) is waxy and full-bodied, evolving from stone fruit and almond in youth to beeswax, honey, and marzipan in full maturity.
