About Chateau Pavie

Château Pavie, the Perse family's Saint-Émilion Premier Grand Cru Classé 'A', is a single south-facing block of about 42 ha with three terroirs: a limestone plateau carrying most of the Merlot, a clay-over-limestone slope for Cabernet Franc, and sandy-clay gravel at the foot for Cabernet Sauvignon. Plantings run about half Merlot, 30% Cabernet Franc and an unusually high 20% Cabernet Sauvignon. Each of 21 plots ferments in temperature-controlled wooden vats, with malolactic in barrel; the 2020 aged in 75% new oak, and the style is powerful and concentrated, with firm structure. The second wine, Arômes de Pavie, was an even Merlot–Cabernet Franc split in 2023, aged 18 months in half-new oak.
