Morlet Chardonnays combine Burgundian tension with California texture: white peach, citrus zest, struck flint, and a creamy mid-palate that stops well short of butter. The Pinot Noirs (Joli Coeur, En Famille) show red cherry, dried rose, and forest floor with silky tannins and refreshing acidity. The Cabernet Sauvignons (Mon Chevalier, Passionnément) are dense and savoury — cassis and iron-mineral with long dry-extract finishes requiring 7–12 years.
