Amarone della Valpolicella DOCG is the benchmark for the appassimento style in Italy and one of the world's great age-worthy red wines. The zone encompasses the three main valleys — Valpantena, Fumane, and Marano — radiating north from Verona, with the Classico zone in the original heartland west of the city commanding the highest prices and producer prestige. By law, Amarone must contain at least 45% Corvina (up to 95%), supported by Corvinone, Rondinella, and permitted local varieties. After the late-October harvest, grapes are dried for a minimum of 90 days, typically until January or February, before slow fermentation converts nearly all residual sugar into the signature dry, concentrated wine. The resulting wine must reach a minimum of 14% ABV, with Riserva bottlings requiring at least 4 years' total ageing. The Classico zone, with its volcanic basalt and limestone soils at 100–500m altitude, produces wines of greater finesse and terroir expression than the broader appellation. Key auction targets include Quintarelli (regular and Monte Ca' Paletta), Dal Forno Romano, Bertani (including rare old vintages from the 1960s–80s), Allegrini, Masi Costasera, Zenato Riserva Sergio, and Tedeschi.

Quintarelli's Amarone della Valpolicella Classico is aged for a minimum of 8 years in Slavonian oak casks before release, with the finest vintages receiving additional time — making it one of Italy's slowest-released wines and among the most rewarding at auction.

The Classico zone's hillside vineyards — reaching 500m in the communes of Fumane, Marano, and Sant'Ambrogio — produce grapes with naturally higher acidity and more complex terpene profiles than flat-land production, giving Classico Amarone its characteristic freshness despite 16%+ ABV.

Dal Forno Romano's Amarone della Valpolicella is made using Bordeaux-inspired techniques — barrique ageing, high extraction, rigorous selection — creating a modernist expression of the appellation that regularly achieves 100-point scores and auction prices above $500 per bottle.

Bertani's Amarone della Valpolicella Classico is unique in the appellation: the estate releases wines only when deemed ready, meaning current releases are from vintages 10–15 years prior, with a historical library extending to 1958 that still appears at major auction houses.

Amarone is defined by extraordinary concentration from the appassimento process: intense dried cherry, dark chocolate, fig, tobacco, and leather on a rich, warming frame with 14–17% ABV. The Classico zone adds a distinctive mineral salinity from volcanic basalt soils. With two decades of age, tertiary notes of espresso, dried rose, prune, and bittersweet dark chocolate emerge with haunting persistence.
