About Lucien Le Moine
Lucien Le Moine is a small Beaune négociant founded in 1999 by Mounir Saouma and Rotem Saouma. Mounir first encountered Chardonnay and Pinot Noir while living in a Trappist monastery, then studied viticulture and oenology in Montpellier and worked in Burgundy, elsewhere in France and California. Rotem, from a cheese-making family, studied agriculture at the Technion and in Dijon. The house buys freshly pressed wine from Côte d'Or premiers and grands crus, usually one to three barrels of each, and raises it on its full lees without fining or filtering, capping output at the hundred barrels its cellar holds. The couple also make Châteauneuf-du-Pape under their own names.
