Sauternes is the world's most celebrated appellation for noble rot dessert wines, produced from Sémillon, Sauvignon Blanc, and Muscadelle grapes affected by Botrytis cinerea — a fungus that, under the right autumn conditions of morning mist and warm afternoons, desiccates grapes on the vine, concentrating sugars, acids, and flavour compounds to extraordinary intensity. The appellation sits in the southern Graves, where the cold Ciron river meets the warmer Garonne, creating the micro-climate that reliably promotes botrytis. Château d'Yquem stands uniquely above the classification as the only Premier Cru Supérieur in Bordeaux, producing wines of almost supernatural richness, complexity, and longevity — great vintages routinely live for 50 to 100 years and beyond. The official 1855 classification placed 11 châteaux as Premiers Crus: Rieussec, Guiraud, Suduiraut, Climens (technically in Barsac), Rabaud-Promis, Rayne-Vigneau, Sigalas-Rabaud, Coutet (Barsac), La Tour Blanche, Lafaurie-Peyraguey, and Clos Haut-Peyraguey. Barsac is geographically within Sauternes and wines may be labelled either Sauternes or Barsac AOC. The finest vintages — years in which botrytis struck consistently and completely — include 1967, 1971, 1975, 1983, 1986, 1988, 1989, 1990, 2001, 2007, 2009, and 2011.

Château d'Yquem is the only wine in Bordeaux awarded Premier Cru Supérieur status in the 1855 Classification — a tier above all other first growths — and has maintained this unique position for over 170 years; a bottle of 1847 d'Yquem sold for $117,000 at Christie's, the highest price ever paid for a bottle of white wine.

Sauternes production is brutally low-yield: harvesters ('tries successives') pass through the vineyard up to 11 separate times to hand-pick individual botrytised berries, resulting in yields as low as 9 hl/ha — the equivalent of one glass of wine per vine, compared to 45 hl/ha for a typical Bordeaux rouge.

The critical botrytis microclimate is created by the collision of two rivers: the cold Ciron, fed by underground springs, creates morning mist when it meets the warmer Garonne, which then burns off in afternoon sun — a combination unique to this narrow band of communes that has no equivalent anywhere else in France.

Great Sauternes from top vintages are virtually immortal as investments: Yquem 2001 traded at $450–600 per half-bottle at auction in 2025, more than two decades after the harvest, and the wine is expected to improve for another 30–50 years.

Young Sauternes dazzles with apricot jam, peach, marmalade, and honeysuckle backed by ginger and vanilla from new oak. As the wines mature, the palate evolves through dried fruits, beeswax, and crème brûlée toward profound notes of saffron, truffled honey, and rancio. The key is the interplay between immense sugar richness and the electric acidity that Sémillon retains even when botrytised — without that tension, great Sauternes would simply be syrup.
